I think Breaking Bad was my favourite series, I loved every episode and Walter White’s struggle and how he changed through the years. The idea of the series could easily go wrong: a teacher is cooking meth with one of his old students, but it’s amazing. If you didn’t watch it, do it.
Our theme for this year’s Halloween will be Breaking Bad so I’ve decided to pair this theme with the Pastry Week from Great British Bake Off, as the technical challenge was Bakewell Tart.

I was thinking of naming my tart: Baking Bad tart, but it would seem like a cooking disaster and not a reference to Breaking Bad. Another thing I love about this recipe is that I can share my legal-meth recipe, trust me, it will meth-in-the-mouth (I just had to make this pun).

Bakewell tart – Ingredients for the pastry:

– 175g plain white flour
– 75g soft butter
– 15g sugar
– 1 egg

Bakewell tart – Ingredients for the filling:

– 75g soft butter
– 75g sugar
– 2 eggs
– 75g ground almonds or hazelnuts
– 100g raspberry jam with whiskey (or any other type of raspberry jam, I had that one in the fridge)
– 30g flaked almonds

Bakewell tart – Ingredients for icing:

– icing sugar
– water
for meth: (this is something I never thought I would say on my blog)
– sugar
– blue food colouring
– flavouring

Make the pastry by mixing the flour and butter together until it resembles breadcrumbs. It can be mixed in a food processor, but I prefer to mix it by hand. Add the sugar and the beaten egg and mix the dough until just holds together and if the butter is soft it’s quite easy to prepare, only a couple of minutes.

On a floured surface, roll the pastry thinly, 1-2mm thick. Line the tin with the pastry and prick the base of the pastry all over with a fork. Leave it in the fridge until the oven is ready. Before baking, put a piece of baking paper on top of the pastry case and fill it with ceramic baking beans.
Preheat the oven at 190C or 170C fan. Bling bake the pastry for 8-10 minutes. Take it out of the oven, remove the baking beans and put it back in the oven for a few more minutes. Take the pastry out and leave it to cool slightly. Spread the jam on the bottom of the pastry case.

Make the filling by mixing the butter and sugar in the food processor. Whizz until it’s creamy. Add the eggs and the ground almonds and mix them in. Spoon the frangipane mixture on top, spreading it evenly. It should be enough to cover the jam completely. Put the tart tray back in the oven. Bake for 25 – 30 minutes until the pastry is crisp and the tart is golden brown.

Usually everything you prepare at home is better than the “shop-bought” version. The same applies to meth and this one is legal.

To make blue-taint crystal meth mix loads of sugar with a little of water, blue food colouring and a few drops of flavouring. I used cherry because I thought it will go good with the raspberry Bakewell tart.
Put the sugar on the hob at high heat and bring it to boil. Leave it boiling for 10 minutes or so, stirring from time to time. When is ready, take it off the heat and pour it on a tray. I’ve used a round silicone tray to get it out easily. Leave it to cool and break it into pieces.

To decorate the tart for the Breaking Bad theme, make icing by mixing the icing sugar with a little bit of water until you have the right consistency, not too runny, not too thick. Put blue meth shards and top and that is it.

  3. Oh dear I’ve never seen Breaking Bad. I am familiar with the crystal meth though, i was researching how to make ice crystals for my daughter’s ‘Frozen’ cake and all that came up was Breaking Bad Crystal Meth recipes. They were all sugar though 🙂 I love your take on the Breaking Well Tart, very clever, and it looks very tasty too.
