Blueberry cupcakes

I’m baking cupcakes very often. It all started last year when I’ve tried a recipe from a Tesco magazine and now we have cupcakes weekly. Festus has his own, obviously. This is my blueberry cupcakes recipe.

Ingredients for 6 Blueberry cupcakes:

– 115 g wholemeal flour
– 60 g unrefined sugar
– 120 ml milk
– blueberries, around 40 g
– 1 egg
– 3 spoons of oil
– half tablespoon of baking powder
– 100g soft cheese
– 25g icing sugar

In a bowl I put the flour, sugar and baking powder. I’ve added the egg, oil, milk and half of the blueberries and I mix everything with a spoon. In less than 1 minute the batter is ready.

Spoon the batter into the cases and scatter the remaining blueberries on top of the cupcakes. Bake for 20 minutes or until golden.

Make the cream cheese frosting by mixing the soft cheese with the icing sugar until smooth. It takes only a few minutes.

Cool them on a wire rack. Ice them with the cream cheese frosting.
