Potato Bake

I’ve been thinking of sharing some very easy recipes. The first is this potato bake. I’ve used a jar of pasta sauce, vegan. Since I “discovered” them, I’ve been using the sauces in all sort of different ways, not only for pasta. The ones I get from the supermarket don’t have added salt or oil, just tomatoes and veggies. It’s really versatile. After trying a few types, I can say that the supermarket own brand (I tried from two different supermarkets) are just as good as the branded ones.

Potato Bake in bowls

For this potato bake I’ve used potatoes, onions, and some frozen green beans I had in the freezer. Feel free to add any other veggies you might have in the freezer for some time.

Ingredients for 6 servings of Potato Bake:

– 4 medium to large potatoes
– 3 red onions
– 1 jar of 500g of pasta sauce
– 150g frozen green beans
– 2 spoons of rapeseed oil

Wash, peel, and cut the potatoes in slices. Do the same with the onions.

Preheat the oven at 200C or 180C fan. In a glass baking tray, pour the oil and brush it on the sides so the veggies will not stick to it. Toss in the onions and arrange them to form a layer. On top of that, add a layer of potatoes. Using a spoon, cover the potatoes with half of the pasta sauce.
In addition, add the frozen green beans on top, and another layer of onions. Finally, add the the last layer of potatoes. Pour the remaining of the pasta sauce on top and level it with the spoon.

Potato Bake

Put the baking tray in the oven. Bake for 50 minutes to an hour. If you are not using a fan assisted oven, turn the baking tray after 40 – 45 minutes, so it cooks evenly.

The dish is now ready to be served. I think it works great on its own, but it can be made as a side dish too. As it’s vegan, it’s something everybody can enjoy.
