This recipe is very easy. But, sometimes, we need something very easy to make with no hassle on a very busy day.

01 Vegg and egg

To make it I’ve used 400g of frozen veggies. Some people are reluctant to eat frozen veggies and I admit I prefer the fresh ones too. But sometimes I’m too busy to chop veggies and in those moments, the bag of frozen veggies is a life saver.

I’ve heated the pan on the hob and I poured a spoon of oil. I tossed in the veggies and let them cook for a few minutes, until they defrost. I’ve added the salt and herbs, parsley and basil.
After that I put them in the cast iron dish and I baked them for a few more minutes in the preheated oven, at 180C fan.

When the veggies were almost done, I put the egg on top and placed it back in the oven for another couple of minutes.
