It’s a dish that I’ve enjoyed since childhood and I want to share it with you. It’s a quick and easy recipe and very healthy too.
Ingredients for White Bean Mash:
– 2 medium onions
– 2 spoons of oil
– 2 tomatoes
– 2 cans of white beans in water
– 1 clove of garlic
– sea salt
– dill and parsley
Chop the onions. Place them with the oil in a pan over medium heat and let them sweat. Stir occasionally.
When they are almost done, add the chopped tomatoes and stir. Peel the tomatoes first. Add some parsley and stir. Let them on the hob for another 5-10 minutes. When it’s ready, leave the sauce to cool.
Drain the beans and put them in a bowl. Add the crushed garlic, the salt and the dill and mash them with a hand-blender. It should take only a few minutes. If the mash is too thick, add some water. Put the mash in the serving bowl.
Add the sauce on top and the mash and it’s ready to be served.
