Creamy garlic risotto with mushrooms

I make creamy pasta with mushrooms, but I never made risotto like this until now. It is easy, delicious and I will make it again.

01 Creamy garlic risotto with mushrooms

Ingredients for 4 servings:
– 500g rice for risotto
– 500g mushrooms
– 200g reduced fat soft cheese
– garlic
– 3 spoons of oil

Heat the oil and fry the garlic to release the flavour.

Add the rice and stir continuously for a couple of minutes, until the rice gets a light brown colour.

Add the chopped mushrooms and stir. Add water and leave it to boil, stirring occasionally. Cook the rice according to the specifications on the package, some types of rice can take longer to cook.

Add the soft cheese and stir. Leave it for a couple of minutes on the hob.

Add some grated cheddar and the risotto is ready to be served.

    1. Thank you for hosting the link up. I like soft cheese a lot, especially the low fat alternative, it adds the creaminess without a lot of calories.
