I wanted to make a risotto and I looked in the cupboards to see what I can cook. I decided on smoked paprika and pea risotto because I thought the flavours would work and it did.
Ingredients for 4 servings:
– 500g rice for risotto
– 200g boiled peas
– 3 small onions or 2 big ones
– 200g soft cheese
– 3 spoons of oil
– 1 teaspoon of smoked paprika
Heat the oil and shallow fry the chopped onions for a few minutes. Stir from time to time so the onions don’t stick to the pan. Add a few spoons of water and stir. Wait for a couple of minutes and add the rice.
Stir continuously for a minute, until the rice gets a light brown colour. Pour 1l of boiling water on top of the rice. Leave it to boil for 10 minutes. When the rice is cooked take it off the heat. Remember to look on the package for specifications regarding the cooking time because some types of rice can take longer to cook.
Add the soft cheese and the smoked paprika and mix them until the spice is incorporated. Add the peas and mix gently.
