Samphire with potatoes and mushrooms

Samphire looked so interesting in TV shows like Masterchef that I wanted to try it. I bought a box from the supermarket not knowing how I’m going to prepare it.
Samphire is a plant that grows on rocks and cliffs by the sea. I was curious about it that I tasted it before cooking and it is amazing, bitter at first, then sweet and then salty.

Samphire with potatoes and mushrooms

As it has a strong flavour, I decided to pair it with potatoes and mushrooms. There aren’t a lot of vegetarian samphire ideas on the internet as it is usually associated with fish for obvious reasons.

Ingredients for 2 servings:
– 90g samphire
– 1 spoon of butter
– 350g potatoes
– 250g mushrooms
– salt
– pepper
– dill

I boiled the potatoes for 20 minutes and then pan fried them in a spoon of oil with sea salt and dill. At the same time I’ve grilled the mushrooms on the stem. The samphire cooks in a few minutes, so I boiled it when everything else was almost ready to serve.

Put the samphire in simmering water and boil it for 2 minutes. Then drain it.

Put butter and the pepper and mix the salad with a spoon. Don’t add salt as the samphire has a salty flavour and it will be too salty. Add some more butter if you want and mix. The salad is ready to be served.

Samphire was delicious and I would love to eat it again. I had a look at its nutritional info on the box and it’s great, it has a lot of fibres (5g per 100g).

  4. Yum. I quite like samphire, but don’t tuck into it much as I’d like too as I don’t find it much where I am. I did recently though make a vegetarian Quiche with Samphire, it was really lovely.
