My husband loves pizza, so last time I baked potato bread, I made a little more and baked a pizza too.

This time I made the pizza with canned cherry tomatoes, olives, mushrooms, vegan cheese, and green pepper. I think the cherry tomatoes were very good and it looked so much better than having tomato cubes. It wasn’t a lot of moisture from the tomatoes and I could use them as they were, without having to prepare them, as I have to with raw tomatoes.

Pizza with potato bread base. Ingredients for the base:

– 100g wholemeal strong flour
– 100g white strong flour
– 100g mashed potatoes
– 125ml lukewarm water
– 4g fast-action yeast
– salt
– 3-4 spoons of cornmeal

Pizza with potato bread base. Ingredients for the toppings:

– 1 can of cherry tomatoes
– 50g tomato paste
– 100g vegan cheddar
– 200g mushrooms
– 1 spoon of oil
– a few bits of green pepper
– 10 green olives
– 1 tsp chilli oil
– garlic powder
– oregano
– basil

Make the dough by mixing the flours together. Add the salt and the mashed potatoes, the yeast and the water. Incorporate the water and tip the dough onto a lightly floured worktop. I used a stand mixer to mix and the dough is wet and sticky. Tip it onto the worktop that was sprinkled with cornmeal. Flatten the dough with a rolling pin. Try to keep the dough as wet as possible. Sprinkle more cornmeal if you need to. When the dough is ready, put it in the baking tray. Leave it to rise for 30-45 minutes or a little bit more. The dough will rise easier if it’s warm and there isn’t any cold draft in the room.

While the dough is rising, make the pizza sauce. Remove the cherry tomatoes from its sauce. In a small saucepan, pour the sauce from the cherry tomatoes and incorporate in the tomato paste. Add the chilli oil and some herbs and mix. Leave the sauce on the hob over medium heat until it starts to boil. Take off the heat and leave to cool.
Wash and cut the mushrooms and gently fry them in a frying pan over medium heat in a spoon of oil. Wash and cut a few pieces of green pepper and the green olives.

Preheat the oven at 220C/200C fan.
When the dough has risen, spread the tomato sauce on top, add the toppings and bake the pizza for around 20 minutes.
