Strawberry salad

Strawberry salad sounds good, doesn’t it? Not as a sweet fruit salad, but a savoury strawberry salad. My husband was a bit apprehensive when he heard my plans, but ended up enjoying the salad a lot. He said he would eat it again. It’s not the first time I made savoury salad with fruits, for example I’ve made a Roasted Tomatoes Blackberries Salad and it was delicious.

The sweetness of the strawberries, that were freshly picked, as I will talk about a bit later in the post, works just great with the balsamic vinegar and the saltiness of the feta-style cheese. I’ve used a vegan cheese because I like this particular feta. It is a bit harder than a dairy feta, so, for me, it works better in a salad, as the texture complements nicely the softness of the fruits.

I didn’t add a lot of spices because the flavours of the salad, cheese, and strawberries are powerful enough to create a special dish and there is no need for extra flavour. I’ve added just a bit of salt and a bit of crushed pepper, for a bit of a kick.

Strawberries picked up from the field

This year we went to a local farm to pick our own strawberries. It’s an activity we both enjoy doing each Summer. We went on a Sunday, on a gorgeous day, so it was incredibly busy. We barely got a parking space in the field and, when we left, we saw others parked near the field. It is a very popular pass time for the Brits. Some farms have farm shops and it is a great opportunity to stock up on fresh veggies as well.

Ingredients for strawberry salad, 2 servings:

– 60g lamb lettuce
– spring onions (2)
– 150g strawberries
– 100g cucumber
– 70g feta-style cheese
– 2 spoons of olive oil
– balsamic vinegar
– salt, pepper

Prepare two bowls for the salad. Wash and pat dry the lamb lettuce if is necessary. Wash the veggies and the strawberries. Cut the spring onions in small pieces. Do the same with the cucumber and strawberries. Put the fruits and vegetables in the bowls. Cut or crush the feta in your hands, sprinkle salt and pepper on top. Pour the olive oil and the balsamic vinegar and the salad is ready to be enjoyed.

  1. I’ve had strawberry/spinach salads before and this looks like a similar offering. I have a vegan mozzarella I like that I think would work well in this.
