This recipe is from the Fujian region, not sure what is the Chinese name. I like pak choi and mushrooms, so a recipe with this two veggies looked very appealing.
Ingredients:
– 3 pak choi
– 300g fresh mushrooms
– 1 garlic clove
– 1 teaspoon cornmeal
– 2 teaspoons soy sauce
Wash the pok choi and cut it in quarters. Heat one spoon of oil in a pan at high temperature. Add the mashed garlic and let it cook for a few seconds, without burning it. Then add the pak choi. Stir until the pak choi starts to cook and becomes soft and translucent. It will take a couple of minutes. Add salt and turn off the heat.
Heat another pan on the hob and add a spoon of oil. Toss in the mushrooms and cook them for a minute, then add some water. Reduce the heat and leave the mushrooms to cook for five more minutes.
Increase to medium heat and add a pinch of salt, the soy sauce and the cornmeal. Stir well and the mushrooms are done.
Put the pak choi on the plates and the mushrooms on top.
