This is similar to a recipe my mother used to make when I was a child and I liked it a lot. This is my version of my childhood classic. It’s ready in a couple of minutes, so is a perfect dish if you are in a hurry.
Ingredients for Bean salad. 2 servings as main or 4 servings as a side dish:
– 1 can of borlotti beans
– 1 can of broad beans
– 1 shallot
– 1 tomato
– 2 spoons of olive oil
– spices: sea salt, black pepper, parsley and sumac,
Drain the beans, wash them and leave them in the sieve to release all the extra water. In the meantime, chop the shallot and the tomato. Add the beans, the oil and the spices and mix them with a spoon.
I prefer to chop the tomato in squares as it looks better.
