As today I’m on holiday caravanning in Yorkshire, I’ve prepared a recipe that I’ve made while camping last time, it is for Lentil Pasta. My plan is that this year I’m going to share a few more recipes in my new series, Caravan Cooking. I’ve made them with soft cheese as a base because it was so easy.

Lentil Pasta

Lentil pasta is great as lentils count as a serving of vegetables, that can boost your daily intake of veggies without even realising it. Their colour is fun and it might be a hit with children as well. It is something new, but there are more and more shops from where you can buy them, including some supermarkets. They are also naturally gluten free if you are preparing food for someone with gluten intolerance.

Ingredients for 2 servings of Lentil Pasta:

– a small pack of lentil Pasta. mine had 200g
– 150g vegan soft cheese
– vegan gratted cheddar
– dried italian herbs
– sea salt
– white pepper

Start by boiling the water for the pasta. Toss them in and leave them to cook according to the instruction on the package. When ready, drain and rinse with cold water. Put them back in the pan and tip the soft cheese on top, add the spices and mix. Have a taste and add more spices if you think is necessary.

Put the pasta on the plates and sprinkle some grated cheese on top.

The dish is not complicated and that makes it perfect to cook when you don’t have a lot of time or you don’t have a lot of space, like I did, in the caravan’s kitchen. Nevertheless, it is a lovely dish, filling from the pasta, lush from the cheese, and flavoursome.

    1. Yes, it is, but the texture is a bit different. Soft cheese is like Philadelphia cheese, you might know that one.
