When I’m very busy and I don’t have a lot of time to cook… I bake. It’s easier to have a meal ready by leaving some root vegetables in the oven for 45 minutes – 1 hour, no hassle. I’ve made roasted celeriac a few times and it’s the perfect side dish.
Cut the celeriac in slices, brush it with oil, add some salt and pepper and leave it in the oven until it’s done. At 180C fan it takes about 45 minutes.
