Soda bread with olives and smoked paprika

I have a passion for bread and since the bread week at Great British Bake Off where I baked 2 different breads, I continued bakeing bread and stopped buying it from supermarket. A while ago I was eating only homemade bread as I love it so much and it’s so easy to make.

01 Soda Bread with olives and smoked paprika

Ingredients for a medium loaf:
– 200g plain white flour
– 200g plain wholemeal flour
– 70g oats
– 100g black olives
– 375ml buttermilk
– 20g butter
– 1/2 teaspoon of salt
– 1 teaspoon of smoked paprika
– 1 teaspoon of bicarbonate of soda

Start by heating the oven at 220C/200C fan. Mix the two types of flour with the bicarbonate, smoked paprika and salt . Add the softened butter and rub it in with the fingers until it resembles breadcrumbs. Add the olives and the oats on top. Make a well and pour in the buttermilk.

Start mixing the dough with a spoon. If it’s difficult to incorporate all the ingredients, flip the dough onto the lightly floured worktop and incorporate by hand. The dough doesn’t have to be kneaded, so don’t over do it.

Put the loaf on tray with baking parchment and flatten it with the hands until is approximately 3-4 cm tall. With a knife cut a cross on top of the bread and dust it with flour.

Bake it for 35 minutes, it should sound hollow when is tapped. Leave it on a cooling rack for 15 minutes and it’s ready to be served.
